Instructions

  1. Preheat the oven to 400°F.
  2. In separate mixing bowls, combine all dry ingredients: cornmeal, flour, salt, baking powder, and baking soda. In another bowl, whisk together eggs, yogurt, milk, and honey. Gradually mix wet ingredients into dry until just combined.
  3. Melt butter in a hot skillet over medium heat. Pour in the batter and bake for 35–40 minutes until golden brown. Allow cooling slightly before crumbling it into pieces.
  4. In the same skillet, add olive oil over medium heat. Sauté onion, celery, and garlic until softened—about 5 minutes.
