  • 75g granulated sugar
  • 10g instant yeast
  • 10g salt
  • 300ml cold whole milk
  • 60g unsalted butter (melted)
  • 250g cold European butter (for layering)
  • 200g dark chocolate (chopped)
  • 150g roasted pistachios
  • 50g brown sugar
  • 2 large eggs (beaten for egg wash)

Instructions

  1. Combine flour, sugar, yeast, and salt in a bowl. Mix in cold milk and melted butter until smooth. Knead for about 8 minutes and refrigerate for at least 4 hours.
  2. Prepare the butter layer by pounding cold butter between parchment paper to form an 8×8 inch square; chill.
  3. Roll out the chilled dough into a rectangle, fold over the butter block, and roll out again. Chill for 30 minutes; repeat folding process two more times.
  4. Pulse pistachios with brown sugar and extracts until coarsely ground.
  5. Roll out dough again, cut into rectangles, place chocolate and pistachio filling on each piece, and roll tightly to form croissants.
  6. Let rise until doubled in size; preheat oven to 400°F (200°C). Brush tops with egg wash, sprinkle with chopped pistachios, and bake for 18-20 minutes until golden brown.
