- 6 cups vegetable broth
- 2 tbsp soy sauce
- 16–20 oz frozen potstickers
- 5 scallions, thinly sliced
- 3 baby bok choy, leaves separated
- 2 tsp toasted sesame oil
- Freshly-ground black pepper (to taste)

Instructions
- Heat 1 tbsp olive oil in a stockpot over medium-high heat. Sauté 8 oz sliced shiitake mushrooms until browned.
- Add another tbsp of olive oil, along with 4 minced garlic cloves and 2 tbsp minced ginger. Sauté until aromatic (1-2 minutes).
- Pour in 6 cups vegetable broth and 2 tbsp soy sauce; bring to a boil.
- Add 16-20 oz frozen potstickers, half of the sliced scallions, and 3 separated baby bok choy leaves. Simmer for 3-4 minutes until heated through.
- Stir in 2 tsp toasted sesame oil, season to taste, and serve hot garnished with remaining scallions.
