  • 8 oz shiitake mushrooms, thinly sliced
  • 2 tbsp fresh ginger, minced
  • 4 garlic cloves, minced
  • 6 cups vegetable broth
  • 2 tbsp soy sauce
  • 1620 oz frozen potstickers
  • 5 scallions, thinly sliced
  • 3 baby bok choy, leaves separated
  • 2 tsp toasted sesame oil
  • Freshly-ground black pepper (to taste)
  • Optional toppings like chili crisp or toasted sesame seeds

Instructions

  1. Heat 1 tbsp olive oil in a stockpot over medium-high heat. Sauté 8 oz sliced shiitake mushrooms until browned.
  2. Add another tbsp of olive oil, along with 4 minced garlic cloves and 2 tbsp minced ginger. Sauté until aromatic (1-2 minutes).
  3. Pour in 6 cups vegetable broth and 2 tbsp soy sauce; bring to a boil.
  4. Add 16-20 oz frozen potstickers, half of the sliced scallions, and 3 separated baby bok choy leaves. Simmer for 3-4 minutes until heated through.
  5. Stir in 2 tsp toasted sesame oil, season to taste, and serve hot garnished with remaining scallions.
