Instructions

  1. Preheat your oven to 350° F. Line a baking sheet with parchment paper and set it aside.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice; set this mixture aside.
  3. In the bowl of a stand mixer or using a hand mixer, beat room temperature butter, granulated sugar, and brown sugar on medium-high speed until light and fluffy, about 3 minutes. Add canned pumpkin puree, egg, and vanilla extract; mix until well combined.
  4. Gradually add the dry ingredients to the wet mixture; mix just until combined.
  5. Using a medium cookie scoop or spoon, scoop heaping tablespoons of dough onto the prepared baking sheet, spacing each cookie about 2 inches apart.
