Ingredients
- 1 pound ground breakfast sausage
- 10 large eggs
- 2 cups cooked tater tots
- 10 fajita-size flour tortillas
- 2 cups shredded cheese (Pepper Jack & Cheddar)
- 1/3 cup all-purpose flour
- 2 3/4 cups milk
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons butter
- 1 cup shredded Pepper Jack cheese
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1 jalapeno, minced
- 2 tablespoons fresh parsley, finely chopped
Instructions
- In a large nonstick pan, cook the ground sausage over medium-high heat until halfway done. Add diced onion and minced jalapeno; reserve 1 cup of the mixture.
- For the gravy, sprinkle flour into the remaining sausage mixture and gradually whisk in milk until thickened.
- Scramble eggs in a separate bowl with butter until fluffy but slightly undercooked.
- Combine reserved sausage mixture, scrambled eggs, tater tots, and half of the cheese in a bowl.
- Fill each tortilla with about ½ cup of the filling, roll them tightly, and place seam-side down in a greased baking dish. Pour gravy over the top and sprinkle with remaining cheese before baking at 350°F for 30-40 minutes.
