- 1 medium head of cauliflower, cut into florets
- 1/2 cup Kalamata olives, pitted and chopped
- 1/4 cup green olives, pitted and chopped
- 2 tablespoons capers, drained
- 1 small red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 3 tablespoons red apple vinegar
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
Instructions
- Blanch the cauliflower in boiling salted water for 2-3 minutes until slightly tender but still crisp. Drain and rinse under cold water to stop cooking.
- In a small bowl or jar, whisk together olive oil, red apple vinegar, lemon juice, Dijon mustard, dried oregano, salt, and pepper until well combined.
- In a large mixing bowl, combine the blanched cauliflower with Kalamata olives, green olives, capers, red onion, cherry tomatoes, parsley (and basil if using).
- Pour the dressing over the salad ingredients and toss to coat evenly. Let it sit for 10-15 minutes for flavors to meld.
- Serve chilled or at room temperature.
