  • 1 medium head of cauliflower, cut into florets
  • 1/2 cup Kalamata olives, pitted and chopped
  • 1/4 cup green olives, pitted and chopped
  • 2 tablespoons capers, drained
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red apple vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  1. Blanch the cauliflower in boiling salted water for 2-3 minutes until slightly tender but still crisp. Drain and rinse under cold water to stop cooking.
  2. In a small bowl or jar, whisk together olive oil, red apple vinegar, lemon juice, Dijon mustard, dried oregano, salt, and pepper until well combined.
  3. In a large mixing bowl, combine the blanched cauliflower with Kalamata olives, green olives, capers, red onion, cherry tomatoes, parsley (and basil if using).
  4. Pour the dressing over the salad ingredients and toss to coat evenly. Let it sit for 10-15 minutes for flavors to meld.
  5. Serve chilled or at room temperature.
