  • 1 link Andouille sausage (or a plant-based alternative), quartered
  • 2 links smoked sausage (or a plant-based alternative), sliced
  • 1 yellow onion, diced
  • 1 rib celery, diced
  • 4 cloves garlic, minced
  • 3 bay leaves
  • 6 cups water or broth
  • 2 beef bouillon cubes (or vegetable broth)
  • 1 tablespoon Cajun seasoning

Instructions

  1. Rinse the dried red beans under cold water until clean.
  2. Dice the onion and celery; mince the garlic.
  3. In the slow cooker, combine red beans, quartered sausage, diced onion and celery, minced garlic, bay leaves, water or broth, bouillon cubes, and Cajun seasoning. Stir well.
  4. Cover and cook on high for 6 hours. For creamier texture, mash some beans against the pot's side towards the end.
  5. Remove bay leaves before serving over cooked rice.
