Instructions
- In a mixing bowl, whisk together brown sugar, molasses, and eggs until blended. Add flour, allspice, cinnamon, baking soda, nutmeg, and salt; stir gently until just combined. Fold in grated shortening, grated carrots, raisins, nuts, and bread crumbs.
- Spray a half-sized bundt pan with non-stick spray and fill it with the batter. Cover tightly with foil; poke a hole in the middle to allow steam to escape.
