- 300g fresh strawberries, sliced
- 75g powdered sugar
- 3 tablespoons strawberry jam or preserve
- 1 tablespoon water
- Shortbread cookie crumbs for garnish

- In a mixing bowl, cream together softened butter and granulated sugar until fluffy. Beat in the egg and vanilla extract, then mix in strawberry powder.
- Gradually add flour and salt until just combined. Shape into a ball, wrap in plastic, and refrigerate for 30 minutes.
- Preheat oven to 350°F (175°C). Roll dough to 1/4 inch thick and cut into boat shapes. Create indentations using your thumb and bake for 12-15 minutes until set. Cool completely.
- In another bowl, beat mascarpone cheese, heavy cream, powdered sugar, and vanilla until thickened. Pipe this filling into cooled cookies.
