  • 3/4 cup diced strawberries, diced into about 1/4-inch pieces
  • 1/2 cup + 2 Tbsp strawberry puree
  • 1/2 cup unsalted butter, nearly at room temperature
  • 1/4 cup salted butter, nearly at room temperature
  • 2 1/22 3/4 cups powdered sugar
  • 1/4 tsp vanilla extract
  • 4 drops red food coloring (optional)
  • Diced and whole strawberries for topping (about 1 lb small strawberries)

Instructions

  1. Preheat your oven to 350°F.
  2. Sift together cake flour, baking powder, baking soda, and salt; set aside.
  3. In a stand mixer, cream butter and granulated sugar until fluffy. Add eggs and mix well.
  4. Combine buttermilk and strawberry puree; gradually add to the butter mixture.
  5. Alternate adding the dry ingredients in three batches until just combined; fold in diced strawberries.
  6. Fill muffin cups with batter and bake for 20–23 minutes until a toothpick comes out clean.
