  • 300 g granulated sugar
  • Zest of one large organic lemon or two small
  • 180 g butter (room temperature)
  • 4 large eggs (room temperature)
  • 240 g sour cream (room temperature)
  • 60 g vegetable oil (e.g., canola oil)
  • 2 tbsp lemon juice
  • 2 tsp vanilla extract
  • 400 g butter (room temperature)
  • 660 g powdered sugar
  • 2 tbsp freeze dried strawberry powder
  • 2 tsp vanilla extract
  • 23 tbsp whole milk (room temperature)
  • Fresh strawberries
  • Lemon slices

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two round cake pans by greasing and flouring them.
  2. In one bowl, mix together all-purpose flour, cornstarch, baking powder, baking soda, and salt.
  3. In another bowl, cream together room-temperature butter, granulated sugar, and lemon zest until light and fluffy.
  4. Add eggs one at a time followed by sour cream, vegetable oil, lemon juice, and vanilla extract; mix well.
  5. Gradually combine dry ingredients with the wet mixture until just blended.
  6. Divide batter between prepared pans and bake for 22 minutes or until a toothpick comes out clean. Cool on racks.
  7. For the buttercream, beat softened butter until creamy then add powdered sugar gradually along with strawberry powder and milk until smooth.
  8. Once cooled, layer the cakes with strawberry buttercream in between and frost the top and sides.
