  • 3 jalapeño peppers (chopped)
  • 2 serrano peppers (chopped) (optional for extra heat)
  • 4 cloves garlic (chopped)
  • 2 cups beef stock (or dark beer)
  • 2.5 cups water (+ more as needed)
  • 2 teaspoons cumin
  • Salt and pepper to taste
  • 2 tablespoons masa harina (corn flour, for thickening, if desired)
  • 1 tablespoon brown sugar
  • 1 tablespoon Worcestershire

Instructions

  1. Toast dried peppers in a dry skillet for about two minutes per side until fragrant.
  2. Cool the peppers, remove stems and seeds, then soak in hot water for 20 minutes.
  3. Blend soaked peppers with salt and some soaking water until smooth; set aside.
  4. In a large pot, heat olive oil over medium-high heat and sear seasoned beef until browned.
  5. Cook chopped onions and jalapeños until softened; stir in garlic for an additional minute.
  6. Add seared beef back to the pot along with chili paste, broth (or beer), water, brown sugar, Worcestershire sauce; bring to a boil.
