  • 34 small zucchinis (cut into thick pieces)
  • 2 medium carrots (sliced)
  • 3 teaspoons tomato paste
  • 2 medium-large ripe tomatoes (diced)
  • 23 tablespoons fresh dill (finely chopped)
  • Sea salt

Instructions

  1. Heat 5 tablespoons of olive oil in a large pot over moderate heat.
  2. Sauté the minced onion and chopped garlic until soft.
  3. Add potatoes, zucchinis, peas, and carrots; cook for about 5 minutes while stirring.
  4. Stir in the tomato paste and cook for an additional minute.
  5. Add diced tomatoes and sea salt; cook for another 2 minutes.
  6. Pour in hot water or vegetable stock; cover and reduce heat to low.
  7. Simmer for 40–50 minutes until vegetables are tender.
  8. Stir in remaining olive oil and chopped dill before serving.
  9. Allow the stew to rest for about 15 minutes before serving.
