  • 6 oz pasta of choice (fettuccine, penne, or linguine)
  • 2 medium Yukon Gold potatoes, diced
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 tsp dried rosemary
  • Salt & pepper to taste
  • Optional: 2 tbsp grated Parmesan for extra flavor
  • 2 tbsp roasted tomato pesto (store-bought or homemade)
  • 1 tbsp plain Greek yogurt or cream
  • Splash of water to thin, if needed
  • Fresh basil or parsley for garnish

Instructions
