- 210g of self-raising flour

- 100g of caster sugar
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of bicarbonate of soda
- 60ml of sunflower oil
- 210g of dairy-free block butter
- 200g of icing sugar
- 20ml of aquafaba (chickpea brine)
- 4 ground Oreo crumbs
- 100g of dairy-free dark chocolate
- White chocolate buttons
- 1 pack of Oreo cookies
Instructions
- Preheat oven to 180°C (350°F) and line a cupcake tray with paper liners.
- In a bowl, combine dairy-free milk and apple cider vinegar; let sit for 5 minutes.
- In another bowl, sift together self-raising flour, cocoa powder, caster sugar, baking powder, and bicarbonate of soda.
- Add sunflower oil to the buttermilk mixture and whisk until combined.
- Pour wet ingredients into dry ingredients; mix gently until just combined.
- Divide batter among cupcake liners and bake for 18-20 minutes or until a toothpick comes out clean. Allow cooling completely.
- Beat dairy-free butter and icing sugar together; gradually add aquafaba to achieve desired frosting consistency.
- Decorate each cupcake with frosting, melted dairy-free dark chocolate drizzle, white chocolate buttons as eyes, and Oreo cookies as bat wings.
